If you're looking for a sweet new beginning, these no-bake crunchy chocolate peanut butter treats are the answer! My favorite part? You only need 8 healthy ingredients! It's probably best to hide these Easter "eggs" from your loved ones, because they mysteriously disappear...
In a large bowl: combine the creamy peanut butter, oat flour, coconut sugar, and sea salt. Stir well until you reach the consistency of cookie dough. See notes!
½ cup creamy peanut butter, ¼ cup oat flour, 2 tablespoons coconut sugar, ⅛ teaspoon sea salt
Pour in the brown rice cereal. Drizzle the maple syrup on top. Combine everything.

Coat your hands with coconut oil to avoid sticky ingredients. Scoop out a tablespoon of filling. Press each one into the curve of a spoon to form an egg shape. Smooth out the edges with your fingertips. Set each mound aside on a foil-lined mini baking tray. Freeze for at least 20 minutes.
Meanwhile, melt the dark chocolate chips and coconut oil in a double boiler. Stir well with a fork.

Remove the “eggs” from your freezer and coat them with a generous amount of chocolate. Immediately, decorate with sprinkles and freeze again (at least 10 minutes), or until the outer shell is hard. ENJOY!

Notes
If your peanut butter is extra runny, add 1 tbsp. of oat flour. Alternatively, you can add 1 tbsp. of peanut butter at a time, if your filling is too dry and crumbly.
Coconut oil in the chocolate coating helps the outer shell harden.
I recommend using chocolate chips sweetened with coconut sugar. Guittard makes a delicious variety!

Natural peanut butter tends to separate. Be sure to stir it well before adding to the final product.
You can choose any natural nut butter! Almond or cashew would work particularly well.
