The Story
Spring is the most magical season! It’s a time for renewal, growth, and expansion. Seeds take root, flowers bloom, birds sing, woodpeckers drum, bears come out of hibernation, bumblebees buzz, and tantalizing aromas fill the air. Longer days and lighter evenings become the norm. All five senses are heightened. Ultimately, winter’s frost melts away and nature comes back to life—as do I!

The Recipe: No-Bake Crunchy Peanut Butter “Eggs”
My ideal Easter candy is salty and sweet. So, peanut butter and chocolate are the obvious combination! I created a healthy and delicious solution: no-bake crunchy chocolate peanut butter “eggs.” The filling is made with nut butter (preferably peanut), coconut or oat flour, coconut sugar, maple syrup, brown rice cereal, and a dash of sea salt. The coating is a perfect blend of melted dark chocolate chips and coconut oil.
Dip the mounds in chocolate and decorate with celebratory sprinkles! I promise you, this dessert is festive, fun, and flavorful. A hop in your step is practically guaranteed.
No-Bake Crunchy Chocolate Peanut Butter “Eggs”
Equipment
- Measuring Cups & Spoons
- 1 Fork
- 1 Butter Knife
- 1 Double Boiler
- 1 Large Bowl
- 1 Spatula
- Small Tray
- Aluminum Foil
Ingredients
Filling
- ½ cup creamy peanut butter (all natural)
- ¼ cup oat flour
- 2 tablespoons coconut sugar
- ⅛ teaspoon sea salt
- 1 cup brown rice cereal
- 2 tablespoons maple syrup
Coating
- 1.5 cups dark chocolate chips (I prefer Hu)
- 1 tablespoon coconut oil (melted)
Toppings (OPTIONAL)
- flaky sea salt (Maldon is my favorite)
- sprinkles galore
Instructions
- In a large bowl: combine the creamy peanut butter, oat flour, coconut sugar, and sea salt. Stir well until you reach the consistency of cookie dough. See notes!½ cup creamy peanut butter, ¼ cup oat flour, 2 tablespoons coconut sugar, ⅛ teaspoon sea salt
- Pour in the brown rice cereal. Drizzle the maple syrup on top. Combine everything.1 cup brown rice cereal, 2 tablespoons maple syrup
- Coat your hands with coconut oil to avoid sticky ingredients. Scoop out a tablespoon of filling. Press each one into the curve of a spoon to form an egg shape. Smooth out the edges with your fingertips. Set each mound aside on a foil-lined mini baking tray. Freeze for at least 20 minutes.
- Meanwhile, melt the dark chocolate chips and coconut oil in a double boiler. Stir well with a fork.1.5 cups dark chocolate chips, 1 tablespoon coconut oil
- Remove the “eggs” from your freezer and coat them with a generous amount of chocolate. Immediately, decorate with sprinkles and freeze again (at least 10 minutes), or until the outer shell is hard. ENJOY!flaky sea salt, sprinkles galore
Notes
- If your peanut butter is extra runny, add 1 tbsp. of oat flour. Alternatively, you can add 1 tbsp. of peanut butter at a time, if your filling is too dry and crumbly.
- Coconut oil in the chocolate coating helps the outer shell harden.
- I recommend using chocolate chips sweetened with coconut sugar. Guittard makes a delicious variety!
- MALDON! It is the best flaky sea salt, by far. I sprinkle it on all of my dishes—sweet and savory alike!
- Natural peanut butter tends to separate. Be sure to stir it well before adding to the final product.
- You can choose any natural nut butter! Almond or cashew would work particularly well.
- These chocolate peanut butter “eggs” are easy to store in the fridge or freezer!
